PENGELOLAAN ALAT PRODUKSI KITCHEN DI GRAND JATRA HOTEL PEKANBARU

Abstract


This research purpose to determine how to manage of kitchen equipments in the kitchen Grand Jatra Hotel Pekanbaru. This research to discuss about what kind of kitchen equipment’s classfication, how to manage storage of kitchen equipment, how to ordering some kitchen equipments in Grand Jatra Hotel Pekanbaru. An ordering some tools, it will start by conduct a budget meeting, make a purchase request, purchase order, payment, supplier send the item to the hotel, the item arrived in the hotel, the item checked by purchasing staff, and then the item organized by staff kitchen. And the last discuss about how to storage the food ingredients such as perishable and groceries materials. This research uses qualitative methods in which the data obtain by interviews, observation, and documentation. Based on the results of the research it can be concluded that the management of kitchen equipments in the kitchen Grand Jatra Hotel Pekanbaru is not in accordance with existing standards.
